Valentine's Day Pink Lady Cocktail

This is a cocktail that I made for my Galentineโ€™s Party. I wanted to create something that is both delicious and pretty to look at.

I served mine in an antique Waterford coupe glass for both PRESENTATIONS and to be sipped slowly.

The heart-shaped ice cubes are made of raspberry simple sugar. As you sip the drink, the ice melts, and your drink intensifies with the flavor of raspberryโ€ฆ.and it looks so pretty!

It pairs nicely with almost everything, but I served finger sandwiches and chocolate-dipped cookies for a lovely late-afternoon get-together.

Valentineโ€™s Ladyโ€™s Cocktail

INGREDIENTS

  • Recipe with Egg Whites

    • 1 1/2 ounces of gin

    • 1/2-ounce applejack

    • 1/2-ounce fresh lemon juice

    • one egg white

    • one to two teaspoons of grenadine, depending on how pink you want your drink. I adore the flavor of grenadine so I will use two teaspoons and, at times, a bit more! YUM!

  • Put all ingredients in a shaker, and shake without ice. Shake vigorously for one minute. This will activate the egg whites and help them froth while you are making the cocktail. Pour your drink into your cocktail glass, and only then add ice.

  • Recipe with Aquafaba

    • 1 1/2 ounces of gin

    • 1/2-ounce applejack

    • 1/2-ounce fresh lemon juice

    • two tablespoons aquafaba (drained chickpea juice)

    • one to two teaspoons of grenadine, depending on whether you like the favor. I always use two and, at times, a bit more!

  • Place the aquafaba in a cocktail shaker, and shake vigorously for 30 seconds to aerate.

  • Add the rest of the ingredients along with ice. Shake vigorously for 1 minute.

Recipe for the HEART-SHAPED raspberry simple sugar ice cubes

  • 3/4 cup of raspberries (6oz)

  • 3/4 cup water

  • 1 1/2 cups cleaned raspberries

    • In a small saucepan, add together the sugar, water, and raspberries. Over medium heat, bring to a simmer for about 3 minutes.

    • Reduce the temperature to low and simmer for another 5 minutes. Take the pan off the burner.

    • Let cool

    • Strain the mixture so that you only get the juice of the raspberries.

    • Once all the liquid is strained, place the liquid in an ice mold and freeze overnight.

    • You can keep the rest of the simple sugar for one week.

I love to garnish my serveboards with a flower of some type. Here I added a few roses to keep with the theme of the day.

I made some dark chocolate heart-shaped cookies and orange shortbread rounds and dipped them in chocolate.

I added heart-shaped chocolate and marshmallows to add color to my plates.

I served egg, tuna, chicken salad, and cucumber finger sandwiches. Here are a few examples plated, and I added English biscuits and fruit to garnish the plate.
