Mother's Day Tea and Irish Scones

A Motherโ€™s Day does not need to be filled with huge celebrations to be special. A simple morning filled with flowers, delicious tea and scones is a great way to show you care. In fact, allowing for some tranquil self-care time can be exactly what a busy mother needs to recharge.

What is most important is spending time with those you love. Taking the time to make it special does not mean that it has to be an expensive nor complicated venture. A simple tray of tea and scones can be served either indoors or out on your veranda using decorative items that make it extra special. Really, it is the gesture that counts and if it tastes greatโ€ฆeven better!

I found these beautiful roses at my local supermarket. The beautiful light pink hues were perfect for the simple but elegant design I was going for and they were inexpensive! I arranged them in a sterling silver mint julep cup without any extra greenery. Sometimes, simplicity in design is so much more elegant and sophistated.

A Word About Scones

Did you know that scones were originally made with oats, shaped into a large round, scored into four or six wedges (triangles) and griddle-baked over an open fire (later, a stovetop). With the advent of oven baking, the round of dough was cut into wedges and the scones were baked individually.

Todayโ€™s scones are quick breads, similar to American biscuits. They are traditionally made with wheat flour, sugar, baking powder or baking soda, butter, milk and eggs, and baked in the ovenโ€”both in the traditional wedge form and in round, square and diamond shapes.

For breakfast, there is nothing I adore more than having a quiet moment drinking hot tea with honey and eating something sweet like a scone or biscuit. I donโ€™t do it often since I try to choose super healthy breakfast foods, but there are those days when I just love having a sweet leasurely start to my day. Itโ€™s decedent!

This recipe makes for a delicious Irish scone. I found it in the William Sonoma blog on-line. Before I decided to use this recipe, I looked at other original Irish scone recipes to make sure I was making one that was as close to authentic as I could find. What I like about this recipe is that there are tips from professional pastry chefs about how to make the perfect scone. I followed the recipe with one exception. I put more sugar on top of the scone before baking which created a sweet dark browned crust on top of the scone that I look for.

Once the scones came out of the oven and cooled off, I decided to fill it with a sweetened lemon whipped cream and then top it with a blueberry jam. YUM!

Scones are so versitile. I love that you can make them either savory or sweet depending on the occasion. Since this was for breakfast, I wanted something a little sweet for my MOtherโ€™s day Tea accompaniment.

Once the scones came out of the oven and cooled off, I decided to fill them with a homemade sweetened whipped cream flavored with just a touch of lemon and sugar. I sliced the scone in half, placed the whipped cream on the bottom portion of the scone, I then added another layer of blueberry jam on top of the whipped cream. I then Covered with the top half of the scone. YUM!

Of course, presentation is everything! I placed this sweet irish scone filled with whipped cream and jam on a tiny footed platter and added some colorful fruit. Along with the delicious tea, the scone was a wonderful sweet start to a glorious motherโ€™s day.
